Our enchiladas are packed with roasted honeynut squash (our favorite locally-grown winter squash!) and swiss chard, then smothered in a tomatillo-based sauce that we thicken with toasted pumpkin seeds, making for a perfectly balanced meal all in one dish. We make the enchiladas a bit more like a casserole with layers of tortillas, veggies, and sauce so it's easy to make as many portions as you want.

Winter Squash, Chard, Corn Tortillas, Jack Cheese, Pumpkin Seeds, Tomatillos, Yellow Onions, Pasilla Chiles, Jalapeno Peppers, Garlic, Cilantro, Oregano, Cumin, Salt, Pepper, Olive OilGluten-Free, Contains Dairy
Keep frozen until ready to eat. Thaw completely (ideally in the fridge overnight). Remove lid, cover with foil, and bake at 350 degrees for 20 minutes. Remove foil and bake another 10 minutes or until cheese is melted and golden-brown.
