This stew is adapted from a recipe in one of our favorite cookbooks, The River Cottage Meat Book, a gorgeous cookbook that is an ode to humanely-raised animals and the culinary possibilities that arise when you have meat of the highest quality. Inspired by the flavors of a Tunisian tagine, this stew brings together the sweetness of apricots and the nuttiness of almonds, set against a backdrop of eggplant and tomato. And, of course, the star is deliciously spiced grass-fed lamb.

Ingredients Storage Tips
Grass-Fed Lamb, Eggplant, Tomato, Dried Apricots, Almonds, Onion, Celery, Cumin, Cloves, Cilantro, Ginger, Coriander, Lamb Stock, Olive Oil, Salt, PepperGluten-Free, Dairy-Free
Keep stew pouch frozen until ready to eat. Stew will stay good in the freezer for approximately 3 months. To defrost: thaw overnight in the fridge or submerge pouch in warm water, then heat stew on the stove or in a bowl in the microwave. DO NOT place pouch directly in the microwave. Once thawed, enjoy within 5 days.
